Yesterday we attended a friend’s wedding which had delicious Shri Lankan catering. Today I was inspired to make something a little different for my 10 month old baby’s lunch. I was surprised how quick and how easy it was. Even though it wasn’t as good as last nights catered dinner it was pretty good. First I steamed one middle sized orange kumara. Then I sauted 1/4 tsp ground turmeric, 1/4 tsp ground cumin and 1/4 tsp ground coriander in a little olive oil. Once the spices smelt aromatic ( about 30 seconds) I added a tablespoon of the thick coconut cream (from the top of the can) and about 1/4 cup of the liquid ( from the can) to the spices. Next I added the cooked kumara and 1/2 cup of fresh baby spinach leaves. I cooked this for a minute or so till the spinach was wilted. Then I blitzed adding a little more water as needed till the consistency that Louis likes.
Full of good fats, iron from the leafy greens, good carbs and health giving herbs and spices this ticks all the boxes. I’ve always cooked flavoursome food for my babies, providing great nutrition as well as stimulating their developing taste buds with different flavours. And they love it!
