There’s a glut of citrus and eggs around here at the moment so I decided to rustle up my orange and macadamia cake. You can use almond meal if you prefer, in fact I think that is what the original recipe called for. Macadamias are the only nuts I can grow here and I have a basket full of unshelled nuts. My eldest daughter Molly was visiting for the weekend so I took the opportunity to shell some while we sat and talked.There is something so satisfying about eating cake and knowing it’s not just sweet and yummy but has major goodness as well. Ingredients; 3 or 4 whole oranges boiled until soft, 9 eggs, 250gm sugar, 250gm almond or macadamia meal, 2 tsp baking powder.
Method; Boil the 3 large or 4 small oranges in water until they are soft. Meanwhile beat the eggs in a food processor for ages until they become very thick and pale. Slowly add the sugar, nut meal and baking powder, with the processor going. Lastly add the oranges, just chopped so they can fit through the processor feed chute. Pour the mixture into a large greased and floured baking tin. I have a big old springform tin measuring 10″ (26cm) which is perfect. Bake in preheated oven at 180C for approx 60 minutes or when an inserted toothpick comes out clean. Best served with a dollop of natural yoghurt. Enjoy.
