For my last birthday I was given the NZ cookbook "Whole". This is Monique Satherley's Paleo Banana Bread. It's the best textured gluten free cake/loaf I've found to date and I'll definitely be playing around with this recipe for different blends. What's more I had all the ingredients in my pantry. It's super simple and if you are like me and seriously cutting refined sugar from your diet and with a post menopausal sweet tooth this is perfect to have on hand.

Gluten-free Banana Bread

My youngest daughter Cherry put me onto this recipe a few weeks ago. Say Banana bread and it doesn't get me very excited but tasting this, well that was another story altogether. Tricia's Focaccia

Focaccia bread will always turn any meal into a special event.... it takes no time at all to make and it's super easy. Everyone loves this foccacia bread. Use it for a peasant lunch with salads, cheese and olives, or with dips like hummus, pesto and tapenade. For a main meal with soup, a hearty stew or with pasta to mop up the red sauce. If there is any left over in the morning my kids will toast it and use it under eggs for breakfast. I also use this bread as my pizza base. For focaccia vary the garnishes. My fave is fresh rosemary. Try black olives, sundried tomatoes, fresh sage leaves or caramelized onions. Rock salt is an absolute essential. You may have noticed from my other blogs that all my recipes are simple. I cannot be bothered making food so complicated you don't enjoy making it. Creating simple, delicious, healthy and visually appealing food is the name of the game in my kitchen. Palms Bread

This is the bread that is voted tops by everyone in the family. It lasts for ages, in fact it is still good for toast after a week and freezes well. This recipe makes two large, or three regular size loaves and I usually break the loaves into halves and keep one half out and freeze or give the others away. I always make it when the kids are visiting and give them a half loaf each to take home. They are pretty keen because it's such a delicious and wholesome bread.  I use organic ingredients and this makes for a nutritionally superior bread. For recipe read the full post
